Happy Belly: Dinner Time

So, for a few reasons I've been trying to keep track of what I eat for dinner.  Firstly, I want my readers to see that vegan food is not boring, but in fact tasty and fun to make and eat.  Secondly, it forces me to actually make dinner and make healthy well rounded meals when I am using my blog to hold me accountable.  Thirdly, it helps me remember the recipes I loved, and helps me keep adding variety to the things I eat - because blogging the same mac n cheese 5 nights a week does not a good blog post make.

PS happy new president day! As I am writing this, I have no idea who/what will happen, but when this post goes up everything will be crazy  and awesome woohoo (or not)
